Butternut Squash Mac N' Cheese

I've been trying to cut back on my dairy consumption recently because I think it's been hurting my stomach to eat it in the mass quantities that I prefer it in. A potential intolerance of any degree to dairy is obviously my second worst nightmare (first is alapecia, naturally) so I've VERY begrudgingly made a bargain with my stomach that I'll focus my dairy consumption on cheese if it just chills out and lets me live my god damn life (and eat 100% of the cheese 100% of time).

Here's the deal with recipes for things that start delicious and promise to still be delicious when you remove 80% of the coolest ingredients: they never taste like the original. They just don't. I'm looking at you fat-free cookies and anything made without meat that should be made with meat. So, if you give this recipe a shot, go into it envisioning a cheesy butternut squash pasta rather than the creamy, decadent mac n' cheese that came to mind when you first saw the title of this post. This title is a lie. I'm a liar. This pasta is NOT mac n' cheese. But it's actually a pretty decent pasta dish so I'm going to share the recipe nonetheless.

Butternut Squash Mac N' Cheese

ingredients:

  • 1 cup of cubed butternut squash
  • 1 1/2 cups of pasta
  • 1 cup shredded cheese (I mixed cheddar, Parmesan, and goat cheese)
  • 1/3 cup almond milk
  • 1 tbsp. butter
  • 1 tbsp. chopped rosemary
  • salt & pepper to taste

make it:

  1. Start by boiling your pasta in well-salted water - drain and set aside when it's finished.
  2. While your pasta is cooking, boil your butternut squash in about 1 -2" of salted water. When it's tender (about 8-10 minutes), drain the water and mash up your squash (or throw it in your blender or food processor).
  3. Return your squash to the pan - add your milk, butter, cheese, and pasta. Stir it up, sprinkle the rosemary on top, and season to perfection.
